Jill’s Prawn Chilli Pasta
Splash of light olive oil
2 garlic cloves crushed
1 red chilli diced
Juice one lemon
100ml dry white wine
350g peeled raw tiger prawns
Salt and ground pepper
2 tbsp grated Parmesan cheese
1. Cook the pasta in a large pan of boiling salted water, meanwhile cook the garlic and chilli in the oil for about one minute.
2. Add the lemon juice, white wine and parsley and gently simmer for a couple of minutes.
3. Add the prawns and cook until they turn pink, then add the rocket.
4. Toss everything with the drained spaghetti, season and serve. Sprinkle with parmesan.
You can vary the dish by using different types of pasta – try adding spinach or watercress instead of parsley.
