Tomatoes are in abundance this year and even if you haven’t grown your own this healthy soup is so easy to make. It’s loaded with vitamins and antioxidants, low in cholesterol which is great for your heart.
Fill a medium saucepan with tomatoes, chop them up if they are large.
Pour in enough water or stock to fill pan one third full.
Add a finely chopped red onion and half a peeled and chopped sweet potato.
Bring to the boil, cover and simmer for about 30 minutes.
Liquidise, then pass through a sieve to remove pips and skin.
Season and serve sprinkled with chopped chives.
