It’s Shrove Tuesday so why not get flipping with this delicious healthy pancake recipe.
115 g plain flour
2 medium eggs
300 ml skimmed milk
90 ml of water
A handful of blueberries
Creme fraiche (optional)
Mix the milk and a little bit of the water in a jug. Sift the flour into a bowl and make a well in the middle. Start whisking the eggs and gradually add the flour.
Slowly add the milk and water mixture until all the liquid has been added until you’re left with a smooth batter. Heat a frying pan, spray with a little oil and add 2 tbsp of batter at a time. Cook for around 20 -30 seconds and flip! Cook for the same amount of time on the other side or until the edges are beginning to brown.
Serve on a plate with a few blueberries and a dollop of half fat creme fraiche.
